Lentil Tacos with Creamy Avocado Lime Dressing

Lentils, a part of the human diet since Paleolithic times, may be your new best friend. This pulse even has more disease-fighting phenols than apples, cherries, plums, broccoli, cabbage, grapes, & onions.

Filling Ingredients:

  • 1 medium onion, finely diced
  • 1 tbsp olive oil
  • I large tomato, cubed
  • 2 cups of cooked lentils
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1 tsp turmeric powder
  • 1 tsp Himalayan salt
  • 2 cups of shredded red cabbage
  • Juice of 1/2 lime
  • 4 medium carrots, shredded
  • Cilantro to garnish
  • ½ avocado, sliced or cubed
  • 8 organic corn tortillas

Sauce Ingredients:

  • ½ cup organic plain Greek yogurt
  • ¼ tsp Himalayan salt
  • Juice of 1/2 lime
  • ½ pureed avocado

Directions:

  1. Heat the olive oil in a large pan and saute the onions for 3-5 minutes or until translucent.
  2. Add the chili powder, paprika, cumin, garlic, turmeric, salt, cooked lentils, and tomatoes to the onions, and stir well for another 5 minutes.
  3. Place your carrot shreds and cabbage shreds in their own bowls. Cut your lime in half and squeeze one of the halves over the carrots and cabbage. Sprinkle with Himalayan salt.
  4. Prepare your sauce by mixing the yogurt, avocado puree, ¼ tsp salt, and the juice from the remaining lime half together in a bowl.
  5. Serve on warmed tortillas as pictured and enjoy!

Amp Up Your Morning Eggs

This is a simple way to add more plant power to your omelettes- quinoa! 

This omelette was made with 2 whole eggs, whipped with about 1/4 cup of cooked red quinoa. It is filled with organic spinach, organic orange bell peppers, onions, and raw organic local cheddar. 

Why quinoa? 

It’s an excellent food for heart and lung health, energy, and endurance. It’s also very high in complete protein and fiber- this recipe has about 15 grams of protein and 4 grams of fiber. The vitamins, minerals, and phytonutrients in quinoa, such as b2 and magnesium, help with metabolism, tissue repair and growth, enzyme activity, brain function, balancing blood sugar, detoxification, and keeping bones and teeth healthy.

Diets Don’t Work

You can’t turn on the TV, drive down the road or go to a party without  being confronted with America’s hottest obsession: weight. Diets are a billion-dollar industry; companies spend millions and millions luring you to try the latest diet (low carb, high protein, low fat, no fat, you name it) with promises that this will (finally!) be the solution-your shortcut to a thinner body. Advertising efforts also deeply affect our children, who develop distorted body images and are often on diets as early as nine or 10 years of age.

Our culture touts diet pills, celebrity workouts, convenience foods and the newest diet craze to help us achieve our desired weight, but these quick-fix solutions have backfired. I’ve had clients in my office who’ve been on the paleo diet, Atkins, low carb, low fat, high fat, morning banana diet, Weight watchers, vegan, Weston Price diet, Slim fast, AIP diet, South beach diet, raw food diet, Whole 30 diet, MLM diet pills & patches, you name it. Yet they many times end up finding they can’t stick with it long term, maybe it’s too strict, it’s not right for their situation, they don’t love the foods, they feel worse, or they feel better but then it stops working, it’s expensive, it doesn’t work for their family, etc. Sometimes certain aspects of the diet work wonderfully for them, but other parts do not. There is no one diet that works for any one person, because we are all wonderfully unique- these trendy diets do not take into account genetics, medical history, medications & supplements, lifestyle, individual exercise needs, meal planning & family needs, how stress & mood plays into weight loss, special nutritional needs, etc.

America’s populace has reached its highest weight in history. About half of Americans are overweight; one-third are obese. Diets steer us away from our common sense and dip deeply into our pocketbooks while eliciting few, if any, lasting results.

Why?

  • Diets don’t work because each person is unique, with different needs based on gender, age, ancestry and lifestyle; how could one diet be right for everyone?
  • Diets don’t work because they are extreme solutions. As in physics, if a pendulum swings to one extreme, it has to swing equally to the other. A diet might work for a short amount of time, but research shows that almost all diets result in a 10-pound gain once off the diet.
  • Diets don’t work because they are too restrictive. People who fail on diet plans are not flawed or weak. Diets by nature require discipline and restriction at levels that are unsustainable by a healthy human body.
  • Most people are disconnected from why they gain weight and see diet as the only culprit. For example, ignoring or discounting emotions is often the first thing to cause weight imbalances.

In our fast-paced world, we have lost sight of many aspects of life that truly nourish and balance our bodies, such as slowing down, eating a home-cooked meal and spending quality time with loving people. Eating consciously and making simple lifestyle changes will create positive results and release you from the endless cycle of dieting.

Given half a chance, your body will balance out by itself, but this is only possible by getting out of the diet mentality and listening to what you truly need. Imagine taking all of the outward energy you expend on diets, fads and gimmicks and turning it inward, so that you can listen to your heart and inner wisdom. There is no such thing as a quick fix. With careful thought and loving reflection, you can feed yourself in a nourishing way. Working with your body rather than against it will bring you increased energy, stabilized weight and sustainable health.

Hemp seeds (aka hemp hearts) may be one of the most underappreciated super food on earth. Compared to flax seeds, hemp contains more omega 3’s and double the protein. Not only that, but hemp is a COMPLETE protein, which is rare in the plant world (all amino acids are present). When you factor in the incredible amounts of iron, vitamin E, B-vitamins, potassium, fiber, phosphorous, magnesium, zinc, and manganese, hemp seeds become a far superior protein source than meat. Hemp seeds are more digestible than meat, dairy, or eggs.

1 oz hemp seeds ……. 10 grams of complete protein

Healthy Pumpkin Pie Bars

I love this recipe because, well, who doesn’t love dessert? And imagine if that dessert was GOOD for you? It’s like a dream come true. These bars are vegan (add the frosting and it becomes vegetarian), and high in complete protein & fiber. In this one delectable little bar, you’re getting whole grains, healing spices, and healthy fruits. Enjoy!

Ingredients:
30 dates, pitted and diced (about 1 cup diced)
3⁄4 cup water
1 cup teff flour
¼ cup oats
2 tsp cinnamon
3/4 tsp nutmeg
1/8 tsp clove
1/8 tsp ground ginger
1 ½ cups cooked pumpkin puree, or 1- 15 ounce can of pumpkin
1 teaspoon vanilla extract
½ cup almond milk

Instructions:
Place the pitted/diced dates into a small bowl with the 3⁄4 cup of water and soak for 20 minutes.
Preheat oven to 375ºF.
Place the flour and spices a large bowl. In a blender or food processor, blend the soaked dates, the water used to soak the dates, oats, vanilla, and milk for a minute or two until smooth. Pour this into the bowl of dry ingredients, and then add the pumpkin. Mix well with a spoon.
Pour the batter into an 8×8-inch non-stick baking pan. Cook for 25-30 minutes or until you see cracks on the top. Let cool for 15 minutes before cutting and serving. Store in the refrigerator. Optional-top with cream cheese frosting.

Cream Cheese Frosting
Ingredients:
½ cup organic butter
8 oz organic cream cheese
1 ½ tsp coconut sugar
1 tsp vanilla extract
Directions:
In a large bowl, let the cream cheese & butter soften to room temperature. With a hand mixer, blend well. Add the coconut sugar and vanilla and continue mixing until well-blended. Store in refrigerator.

Who has room in their bellies for a whole salad of beet greens, a large beet, an apple, a tangerine, and a whole sweet potato? I sure don’t, so I created a delicious fresh juice instead. And I shall call my creation “Sweets ‘n Beets!”
It has a mild, earthy, and pleasantly sweet flavor to it. I have a ton more energy already and I’m only halfway through drinking it!

So what are the benefits?
This juice cleanses the liver, aids the lymphatic and digestive systems, flushes out uric acid, builds the blood and red blood cells, keeps gums healthy, promotes strong connective tissue, promotes wound healing, lowers risk of cancer, increases energy, lowers cholesterol, protects against viruses, alkalizes your pH, prevents birth defects and reduces nicotine cravings.
